Cranberry-Chocolate Cupcakes


With the holidays coming up, I always like to have unique holiday themed desert ready to go for those holiday parties and pot lucks that pop up. That's how this Cranberry-Chocolate Cupcake was created! I've always associated cranberries with the holidays, and who doesn't like chocolate. This treat is super easy to make so you are definitely going want to give it a try before your next holiday party this season! Happy Baking!

Chocolate Cake:

3 cups Flour

2 cups Sugar

4 TBS Cocoa Powder

2 TSP Baking Soda

1 TSP Salt

1 Cup Oil

2 TSP Vanilla

2 Cups Water

Combine all ingredients in a large bowl and mix.

Fill a cupcake tin 3/4 full and bake at 350 for 15 minutes or until a tooth pick comes out clean.

Cranberry Frosting:

1 Bag Cranberries

3 Cups Sugar

1 Stick Softened Butter

8oz Cream Cheese(1 brick)

3-4 Cups of Powder Sugar

2 TSP Vanilla

To Start the frosting you are going to have to boil your cranberries. To do this put two cups of the berries in the a small sauce pan with the wine and 2 cups of sugar. Let this boil down to a jelly like consistency. Taste periodically, if they are too tart still add more of the sugar to the mixture.

Once you have gotten to the jelly like consistency and sweetness you like you are going to let the mixture cool until it as room temperature.

Once it has cooled put the butter, cream cheese, vanilla, and 3 cups of the powder sugar into a bowl and whip.

Once it comes to a stiff whipped consistency add about 1/4 cup of the cranberry sauce to the frosting. Whip it again.

Taste to see if the flavor is what you want.

If you need more cranberry flavoring add another 1/4 cup.

***If your frosting gets runny because you added more cranberry just add a little more powder sugar until you get the stiff consistency again**

Now you are ready to frost your cupcakes and garnish with a cranberry on top!
