Holiday Buck Eye Cupcakes
This Wednesday was our last staff meeting of the semester for Residence Life, so I thought as a little treat I would bring cupcakes to the meeting!
Well the staff was very happy that they were getting cupcakes because when I walked in I was attacked with hugs and cheers. We are a rowdy punch! :)
So I thought with a reaction like that I had to share them with you!
Chocolate Cake:
3 cups Flour
2 cups Sugar
4 TBS Cocoa Powder
2 TSP Baking Soda
1 TSP Salt
1 Cup Oil
2 TSP Vanilla
2 Cups Water
Combine all ingredients in a large bowl and mix.
Fill a cupcake tin 3/4 full and bake at 350 for 15 minutes or until a tooth pick comes out clean.
Frosting:
1 cup Peanut Butter
1 Stick of Butter
1 cup Powder Sugar
1 TBS Vanilla
Whip together until it is a creamy but thin texture
Chocolate Drizzle:
Half of bag of chocolate
1 TBS of butter
1/2 Cup of Whipping Cream
Put in a small sauce pan and stir continuously, until the texture is thin enough to drizzle over top! If it is too thick just add a little more whipping cream!
Add all the parts together and enjoy! These will be a huge hit with anyone you share them with!!! :)
